Banana, Mango and Coconut Ice Blocks

If I had to sum up Summer in four words banana, mango and ice block would just about do it (or is that two words and a phrase?).

These ice blocks make a tasty and cooling snack on a hot day, that is quite filling, due to the coconut milk.They are easy to make and are a hit with kids (at least, the little fella enjoyed them).

You can find ice block moulds in department and discount stores – I got mine from Target.

Yield: 6-8 ice blocks

These ice blocks make a great sweet treat in summer when bananas and mangos are in season.

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1 banana
  • I mango
  • 1 tbsp. honey or more or less to taste (optional)
  • 300mls coconut milk or coconut water

Instructions

  1. Blend all ingredients in a blender.
  2. Pour into moulds.
  3. Freeze overnight or until frozen.

  1. We call them icy poles where I’m from :) They look very yummy. I have silicon tube icy pole moulds (like callipos) so might have to give them a go. With the coconut milk it seems like they would make a good breakfast for hot days :)
