Lemon and thyme chicken drumsticks are an elegant flavour variation for an inexpensive cut of meat.

Chicken drumsticks are super inexpensive, making them a great budget meat option.

They are also versatile. Switch up the marinade or sauce and you can make a whole different meal.

For this variation, I’ve used a classic flavour combo – lemon and thyme. This marinade makes what’s really a bit of a pedestrian cut of meat a little bit more elegant.

The marinade is simple – along with the lemon and thyme a bit of olive oil and a pinch or two of salt. If you like garlic, add that too. The marinade can be enjoyed either way.

Then bake in the oven until golden.

Ingredients

  • 8 chicken drumsticks
  • juice of 1/2 lemon
  • 1 tsp dried thyme (or 1 – 2 tsp of fresh)
  • 2 Tbsp. of olive oil
  • 1 clove garlic, crushed

Instructions

  1. Slash each drumstick once or twice with a sharp knife for the marinade to penetrate.
  2. Combine marinade ingredients in a container with a tight-fitting lid.
  3. Add in drumsticks, secure lid and give the whole lot a gentle shake to cover the chicken. Leave the chicken to marinate in the fridge for at least one hour, longer if you have time.
  4. Preheat oven to 200°C. Place chicken in a baking dish and drizzle any remaining marinade over chicken.
  5. Bake the drumsticks for 45 minutes – 1 hour or until cooked through.
