There’s just something slightly addictive about that sweet, tangy, creaminess.

And this dip is super simple to make. Two ingredients and two minutes later, you can be kicking back with nibbles and a nice bottle of Chardy.

While corn relish dip is always a hit as part of a nibbles platter, kids really like it too, and so it can be a great lunchbox addition along with some crackers and crudites.

If you want to lower the fat content, you can switch out the sour cream for either light sour cream or natural unsweetened yoghurt. Other recipes use cream cheese instead of sour cream. So if there is no sour cream in the fridge, there are other options.

And while this corn relish dip recipe only has two ingredients, you can fancy it up a little with a sprinkling of parsley if you happen to have some on hand or growing in the garden.

  • 1/2 cup of corn relish
  • 300ml carton of sour cream (or light sour cream)
  • extra corn relish to garnish
  • parsley to garnish

Instructions

  1. Mix together corn relish and sour cream. Place in a serving bowl.
  2. (Optional) Top with a spoonful or two of extra corn relish and a sprinkling of parsley to garnish.
