A surprisingly tasty combination of sweet and salty – banana, bacon and cheese on toast is easy to make and delicious as a breakfast, brunch, or lunch.

Can I just say something?
It’s hard to make this dish look good. But by golly, it sure tastes good!
If you’ve never mixed bacon and banana before, you’re just going to have to try it.
Trust me (or don’t! try for yourself), if you like bananas and you like bacon, you’re going to like them together. You get that perfect balance of sweet and salty all in one mouthful.
And if you’re an Elvis fan, then you’ll know that this is a variation on Elvis’ favourite sandwich, except The King also added peanut butter.
No doubt, a bit of PB would be great, but as this recipe is already not great for the waistline, it’s fine without.

streaky bacon (or shortcut)
cheese (I used sliced Gouda in the pic)
half a banana
Shortcut bacon would be cheaper in Australia.
Also, to reduce costs, a cheaper sliced cheese or block cheese that you slice yourself is a more economical alternative to the Aldi Gouda.
I calculated the cost (Woolworths Australia, 2025) using Gouda cheese and premium streaky bacon and bakery bread, and it came in at $2.12 AU per serve.
Switching to homebrand everything, including sliced tasty cheese and shortcut bacon, and the cost comes to $1.50 per serve AU (2025).
Cooking Tips
Look, truth be told, I wouldn’t normally serve this as pictured. I know, that’s cheating a bit.
Here’s how I would normally put this together.
I would toast the bread, mash the banana, and cook the bacon.
(Top tip: cook the bacon in a sandwich press for a super speedy breakfast. Alternatively, cook under the grill on a piece of foil for less washing up.)
Then I would spread the mashed banana over the toast, top it with the cooked bacon and then the slice of cheese.
To finish, I would melt the cheese under the grill (broiler). Not as pretty to photograph (although this photo didn’t end up much prettier), but it’s more practical and easier to eat.
What to Do with the Leftovers
Leftover bananas can be eaten as is, sliced over oatmeal or put into a smoothie.
Bacon can be frozen in portions for later. Use the leftover bacon in a leftover frittata, pantry pasta, carbonara pasta, loaded potatoes, or just with an egg on toast.
And the leftover bread and cheese can be used for lunch toasties throughout the week, or turn the day-old bread into French toast, and use the sliced cheese in white sauce to make the best Mac and Cheese.

- 1 slice bread
- 1 shortcut, middle cut, or rasher of bacon
- 1/2 banana, sliced

I’ve been eating these for 30 years but you grill one side of the bread then turn the bread over untoasted side up, place the banana and bacon go on then cover with cheese then back under the grill till the banana’s nice and soft and the cheese has melted and golden.
